To poach all your eggs at the same time, break them into cups first to slip them into the water quickly; otherwise the first one you crack into the pan will be cooked by the time you have fumbled around with the last one.
• Have two pans of water simmering, one salted for the broccoli and one with a splash of vinegar for the eggs.
• Crack your eggs into four cups. Plunge the broccoli into the simmering salted water, then carefully tip the eggs into the vinegar water, turning the heat up a little under them to form a rolling simmer so the whites rise up in the pan to surround the yolks. The broccoli will take 2-3 minutes, depending on the thickness of the stalks, and the eggs will take a couple of minutes too.
• Drain the broccoli in a colander and remove the eggs with a slotted spoon, on to some kitchen paper.
• Melt the butter in a pan and stir in the shrimps. Season, add the lemon juice, then remove from the heat.
• To serve, arrange the broccoli on warmed serving plates, place an egg on top and spoon over the shrimps and butter.
