Classic Welsh rarebit is usually made with cheddar. But this recipe completely rips up the rule book by using Lanark Blue – a feisty sheep’s blue from Scotland – and sherry to create a rich, indulgent version that is all its own. If you can’t find cream sherry, then replace with tawny port. Likewise, any punchy sheep’s blue cheese, such as Roquefort or Beenleigh Blue, can be used.

• Place the shallot in a pan, add the sherry and place over a medium heat. Cook for around 10 minutes until the sherry reduces to a thick syrup. Be careful not to take it too far and let the all the liquid evaporate.

• Preheat the grill to 180C. In a large bowl, place the Lanark Blue, crème fraîche, egg yolk, mustard, honey and walnuts. Add the cream sherry syrup and mix everything together well to form a thick paste.

• Toast your slices of bread (both sides), then spread the cheese and cherry mixture evenly across them.

• Place under the grill for a few minutes until molten and golden brown.
